I love the burrito bowls offered at
Chipotle, so today I decided I'd try to make it from home. It came out AMAZING! It tasted just like I hoped it would, and I can add it to my list of awesome things I can make.
I started out with plain boil in bag rice, then I added chopped fresh Cilantro, salt, and a dash of lemon juice.

I prepared the chicken. I took half of a raw chicken breast, seasoned it with
Adobo and
Cajun spice, then grilled it on my mini kitchen grill. I chopped it up to small pieces as well.

After the rice and chicken were done, I started to prepare the dish. Here's a few of the ingredients I used:

I first layered the rice.

Then I layered the beans.

Next was the chicken.

I put a spoonful of salsa
on top, then a small spoonful of salsa con
queso.
I took 1 stick of low fat mozzarella, chopped it up small, and placed it on.

Then added a dollop of sour cream, a pinch more of fresh cilantro, and it's complete!!
if you like the salsa with the corn, try taking a can of corn and chopping fresh tomatoes up with it... or take the lazy way and add a can of corn to salsa and cook it up for a little while. i always grill up some peppers and onions in a frying pan with some spices and throw them into burritos too.... i just like lots of veggies on my burritos.... mm i am hungry now
ReplyDeletei like veggies, but not peppers and onions. sometimes i'll actually cook things in peppers and onions to get the flavor, then ill tost the p&o in the garbage =P
