Saturday Sammich

It's Saturday morning and I'm starving! But before we get to eating, I want to send my wishes out to those in Chile today who suffered an 8.8 earthquake this morning. And crossing my fingers for Hawaii as they are patiently waiting as a tsunami warning is in effect at the moment. Best wishes to all of you, and may your families stay strong and safe.



So, today I started off with a typical breakfast sandwich, except I used a few nontraditional ingredients. I used egg whites instead of whole eggs, tofu bacon (one slice of tofu bacon has only 20 calories, and it has a lot less fat than the real stuff), 1 slice of American cheese, and a 100 calorie thin bun.



I used non-stick spray and cooked everything up. The tofu bacon doesn't crisp the same as real bacon, but it fills the void and you don't feel guilty for eating it!



I added some black pepper and ketchup, and Ta Da!! A nice guilt free breakfast sandwich, without all the fat and calories of a typical eggs & bacon breakfast.
