Crab Cakes

A while ago I made an attempt at crab cakes. They didn't come out as planned, to say the least. So I figured I'd try again!!

I used one can of crab meat, one egg, about 1/4 cup Mayo, 1 teaspoon Dijon, splash of lemon juice, some dried parsley, and of course some salt & pepper.



I mixed all those ingredient together in a bowl. On a separate plate, I rolled a handful of the mixture in a heap of panko breadcrumbs. Then patted them flat and dropped them in a hot skillet of vegetable oil. I let them cook on both sides until golden brown and removed onto a plate lined with paper towels to dry any excess oil.


Served them hot with some ketchup (or tartar sauce, unfortunately I didn't have any) and enjoy!
