Chicken & Rice Soup

A few weeks or so ago I was at my boyfriend's house when I had some homemade chicken and rice soup that his mother prepared. It was SO good that I was still thinking about it today, and had to make my own version.

I emptied one can of fat free chicken broth into a pot, refilled the can with water, and emptied that in. I placed one raw chicken cutlet in the pot to slowly start cooking while I chopped up some carrots, celery and onions.




After it was nice and hot, I added the vegetables to soften and cook along with the chicken. Once I felt everything was almost done cooking, I removed the chicken and shredded it with two forks. I added it back to the pot, as well as one cup of precooked white rice.


I let the finale mixture cook a bit longer so everything could absorb the flavors, then added a pinch of basil, garlic powder, and some salt/pepper. It came out fantastic!
