My favorite food to order at Houlihans is the bruschetta appetizer. Chunky tomato over smooth cheese on a crisp toast, how awesome is that? I've made my own version at home before and it was just as amazing, and when I was thinking up ideas of what to make for dinner it was the best thing to come to mind.
I started with panko crusted chicken tenders that I decided to bake instead of fry.
Then I made the bruschetta to top off the chicken. I took just one plum tomato (the only one I had left, sadly) and diced it up. I mixed it with olive oil, basil, oregano, garlic, and Parmesan cheese.
I added a side of garlic green beans and my meal was complete!
