White Wine Tilapia

Tonight is a night for myself. I left work and went to the gym, then came home and made myself a healthy meal. I'm spending the night in bed scrolling through Netflix for the next best thing, and I even get to sleep in tomorrow since I don't have work until noon! Ah, relaxation!


Dinner was pretty amazing tonight too. I started off by grilling some tilapia (seasoned with salt and pepper) on my mini kitchen grill. I took some white wine, capers, and minced garlic and let it simmer till it reduced by half. I poured that mixture over the tilapia and served a side of green beans in olive oil and sea salt, and a baked sweet potato. I thought it would be rather bland and boring, but I really liked the flavor and I'll definitely be making this again!
