Wednesday, halfway through the week. This weekend is
ZombieCon, and I want it to be TODAY! I am so grumpy right now and dressing up like a zombie would really cheer me up. In the meantime, some delicious food will have to do.

I made some pretty kick ass meat tonight, I do say. Beef that is slow cooked in wine. I love it. There is a real recipe to this, but I've made it so many times that I just eyeball it now. Originally this is a pot roast/beef stew recipe that calls for adding vegetables halfway through. Tonight I omitted that and just made the meat itself.
Take beef cubes and brown the outside, then transfer to a dutch oven (I giggle everytime I say that. I know, I'm mature). Add 8oz beef broth and a cup of red wine. Mix in some onion, garlic, thyme, a bay leaf, and salt and pepper. Keep the oven at a nice 350 degrees for about 2 hours.

What's left is an amazing meat that falls apart in your mouth. Slow cooked is deffinately my favorite method, and the wine is what pulls this all together.
