Guess it's almost time to take my air conditioner out, seeing as how I woke up this morning to a lovely fall breeze seeping through the cracks of my window. But, its this time of year I love the most and boy was yesterday beautiful. Yesterday was my dad's memorial, and it went perfect. So many friends and family showed up; lots of folks we hadn't seen in years. A friend drove my dad's bike to the event, and man oh man.. dad would have loved the attention it was getting. The crowd even pulled in a reporter for The Star-Ledger.
With this great weather, also comes great crops! Last week Arty and I went vegetable picking with his family. We hit up Race Farms in Blairstown, NJ and picked some apples, tomatoes, and eggplants. I used the apple to make a delicious apple & carrot spiced cake (I'll prob show you that later) and I used the tomatoes for a fresh tomato soup. I wasn't sure what to expect, I really thought I would turn this soup into something unintended (like a marinara sauce instead!) But, it came out really great and I'm proud to be serving it to my mom later!
First thing I had to do: Peel the tomatoes. First put in boiling water for just a minute or so, then remove and put in ice water, also for just a minute. Then the skin peels right off with ease.
After peeling them, I used my hands to crush them, then chopped up some veggies.
Once ready, everything was transferred into a blender and turned into a puree. Some rice was made on the side and mixed in for the finishing touch.
