Shrimp Fried Rice

It's so pretty out today! For anyone on the east coast, they understand how much needed this sunny weather is! Anyway, last night I made an AMAZING shrimp fried rice. I honestly didn't expect it to come out that good, but it tasted like it came straight from Chinese delivery!
With the exception of some cooking spray and a little salt/pepper, these are all the ingredients I used: baby salad shrimp, brown rice, peas, carrots, mushrooms, and egg whites.
First thing I did was make some scrambled egg whites, only a few tablespoons worth. I removed that from the pan and into a bowl. In the same pan, I added the shrimp, carrots, and mushrooms. After they cooked for a few minutes, I added the rice, peas, and put the eggs back in, then seasoned with salt and pepper.


Served it hot and it was AMAZING! I totally did not expect something so simple to taste so awesome.
